Chocolate Mousse


*Mousse Recipe
  • 600g Cream (600ml)
  • 75g Sugar
  • 500g Dark chocolate
  • 4 Eggs


*Mousse Method
  1. Whisk Cream (2/5) and after being made cream, add left over slowly
  2. Put the cream in the bowl and then put into the fridge
  3. Boil water.
  4. Whisk egg on “3 speed” till light orange colour (3-4min)
  5. Add sugar and mix for 10min (using timer)
  6. After water boiling, turn off and malt chocolate (Bain Marie)
  7. Add half malted chocolate into above. (during mixing speed “1”)
  8. Quickly, change speed “3” and mix 20 second.
  9. Add another half during mixing (speed 1 ) and quickly change speed “3” and then mix till combine
  10. Add cream half and mix by hand and put another half and mix by hand again till mixed well.
