*Mousse Recipe
- 600g Cream (600ml)
- 75g Sugar
- 500g Dark chocolate
- 4 Eggs
*Mousse Method
- Whisk Cream (2/5) and after being made cream, add left over slowly
- Put the cream in the bowl and then put into the fridge
- Boil water.
- Whisk egg on “3 speed” till light orange colour (3-4min)
- Add sugar and mix for 10min (using timer)
- After water boiling, turn off and malt chocolate (Bain Marie)
- Add half malted chocolate into above. (during mixing speed “1”)
- Quickly, change speed “3” and mix 20 second.
- Add another half during mixing (speed 1 ) and quickly change speed “3” and then mix till combine
- Add cream half and mix by hand and put another half and mix by hand again till mixed well.
